Root Shoot Honey Malt brings a soft, honey-like sweetness and light toasty grain character without adding much color. Similar malting process to Weyermann Melanoidin, but preserves lighter, softer characteristics - like a touch of raisin.

A little goes a long way — 5–15% of the grist is usually plenty. Please let us know if you brew with 100% honey malt - love to hear about it. Option to mill fresh day-of shipping so it doesn't taste like stale honey.

But wait, doesn't this malt have the same color specs as Proximity Biscuit? Yes, but they are not interchangeable. Biscuit is a fully kilned, lightly roasted base malt. Honey follows a process similar to melanoidin malting. It's...distinct: airflow is restricted late in germination, which lets the temperature inside the still-moist grain bed rise higher while enzymes are very active. This controlled heat and moisture triggers a strong Maillard reaction between sugars and amino acids, creating the signature honey-like sweetness, pretzel notes, and light toast with a touch of natural acidity.
