Weyermann Melanoidin is a rich malt that leads with honey and biscuit notes. Use to boost malt character and enable the mystic complexity to arrive in a beer.

Slightly amplified color and flavor compared to Root Shoot Honey Malt; both following a similar malting process. At risk of pissing off a traditional German brewer or decoction brewing-enjoyer, melanoidin malt delivers similar flavors as a decoction process provides (a historic, practical process of boiling a portion of the mash). This is one reason why the malt exists today. In the malting process, it is roasted or gently cooked while wet. This produces similar flavors to boiling a mash - wet cooking. You'll have to get to the bottom of which one is better yourself.

The vast majority of Weyermann's grains (other than specialty or heirloom varieties) are sourced from more than 500 local German farmers in central and south-central Germany. The Franconia region - or northern Bavaria, produces some of the best barley in the world. Malted in Bamberg, Hassfurt, and Clingen, Germany.
