Crystal Malts
Crystal malts provide multiple functions in beer, from targeted notes of sweetness to supporting malt character and adding color. Darker crystals are more efficient at adding color, flavor, and body due to their increased unfermentable sugars.
- Lighter crystals (20–60) → subtle toffee, caramel, malt roundness
- Darker crystals (80–150) → richer raisin, dark fruit, dark and burnt sugar
