80.0°LProximity Crystal 80 is a common, medium-dark roasted crystal malt. It adds deep caramel sweetness and a preview of the complex world. On the ladder of crystals, we're just above halfway up!
Flavor/Aroma
- Pronounced caramel to dark caramel. It ain't shy.
- Slight burnt sugar. Starting to get complex, but still has its wits.
- First sign of dark fruit - raisin. It's been to Burning Man once. Not defined by it.
Beer Interplay
- Adds very firm malt sweetness
- Noticeable contribution to smoothness, or increased mouthfeel
- Imparts amber going to brown color
Practical Usage
"Let's make sure we have strong malt backbone! Cross the I's and dot the T's!"
Frequently used in American west coast IPA, it stands up to those hops and asserts itself! Provides initial deep, rich, becoming complex malt sweetness - but only the first levels of complexity - it's not THAT complicated. Used in "robust," classic American west coast IPA, such as Lagunitas or Dogfish Head staples that have distinguished, deep malt character. Frequently used in strong beers, especially darker.
