Proximity Crystal 60 is a very common, medium-roasted crystal malt, adding pronounced caramel sweetness. This is the safe middle between light and dark crystals.

Flavor/Aroma

  • Pronounced, rounded caramel. Toffee has arrived.
  • We mean the caramel. Yes, "caramel" is a frequent flavor and aroma descriptor, but C60 is caramel's home base. "Firm sweetness." "Toffee."
  • C40 is not quite as sweet or in-depth
  • C80 starts bringing some burnt sugar traits.

Beer Interplay

  • Brings firm sweetness and strong malt support
  • Adds body, but also considerable fermentables - about 70:30 fermentable:unfermentable
  • Imparts deep golden, amber color

Practical Usage

Crystal 60 delivers firm caramel and serious supporting malt balance. Sierra Nevada is a case demonstration at 10% grist, split only with pale malt. That beer has that classic pale ale, deeper malt support and a light amber, 6-8 SRM color. Compared to Sierra Nevada (significant cascade hop usage), more caramel flavors emerge in less competitive-ingredient recipes, as in most lighter beers. Adds complexity to darker beers, particularly when those darker flavors can intermingle well with a medium crystal (in consideration of dark/roasted malts and aggressive hops). Can be significantly dosed 10%+ into a barleywine or strong beer.
