Weyermann Caramunich Type 3 is the darker sibling in the Caramunich family. It delivers the same crystal-style internal caramelization and body-building sugars, but with noticeably richer bready, pastry, and toasted malt depth at a deeper color. It sits in that useful space where it still feels like a caramel malt rather than a roasted one, but brings more complexity than a standard domestic crystal in the same range.

Flavor & Beer Interplay

Pronounced caramel with clear pastry and bread-crust notes. It adds body and a touch of residual sweetness, but the character feels more integrated and substantial than a basic crystal. Less bright toffee pop, more “fresh-baked goods plus real malt” - now at a color that works well in darker beers without tipping fully into roast territory.

  • Vs. Crystal 60: Similar color territory, but Caramunich Type 3 brings more bready and toasted depth while keeping the caramel character smoother and less aggressively sweet.
  • Vs. Melanoidin: Melanoidin is intense kilned malt flavor with almost no extra sugar contribution. Caramunich Type 3 gives crystal-style boost for mouthfeel while carrying richer bready malt character.

How it’s made - leave this to the pros

High-quality, top-shelf, simply the best German barley is germinated, then run through special roasting drums where it’s stewed and caramelized from the inside out. The process parameters are set so you get full internal sugar caramelization (like a classic crystal) while also developing deeper Maillard flavors - the bready, pastry, and toasted notes you normally get from higher-kilned malts. It’s not “take Munich malt and wet-drum-roast it again.” The whole thing is designed from the start to deliver both crystal sugars and extra malt depth together.

When to use

Use 5–10% when you want German-style caramel depth in darker beers - American Brown Ales, English Brown Ales, Porters, Stouts, Old Ales, Scotch Ales, Barleywines, or Imperial Red Ales. It adds color, body, and that bready-caramel complexity without the sharper roast notes you’d get from actual chocolate or black malts.

Use Crystal 60 for cleaner, brighter caramel in this color range. If you want maximum bready/toasty intensity with almost no extra sugar contribution, go Melanoidin. Caramunich Type 3 lives in the useful middle - darker caramel that still feels like it belongs in the crystal family but with more malt personality.

The vast majority of Weyermann's grains (other than specialty or heirloom varieties) are sourced from more than 500 local German farmers in central and south-central Germany. The Franconia region - or northern Bavaria, produces some of the best barley in the world. Malted in Bamberg, Hassfurt, and Clingen, Germany.
