Talus is a newer American hop developed by the Hop Breeding Company and released around 2020. Its name comes from the talus bone in the human ankle - the bone that helps with movement and balance (not talus rock). The breeders chose the name because they felt the hop had a strong, well-rounded, and foundational character, much like how the talus bone supports the body. It delivers big tropical fruit (especially pineapple and mango) with bright citrus and stone fruit notes, making it a popular choice for hazy IPAs when brewers want loud, juicy aroma.

Practical Use
Talus is mainly used for aroma and flavor. It performs well in late boil, whirlpool, and dry hopping, where it brings strong tropical and stone fruit character. Because it’s quite potent, it can easily dominate a beer if used too heavily. Most people find 2–4 oz total in 5 gallons works well for solid impact. Going heavier can make the fruit feel heavy or muddled, so it usually performs best when paired with other hops.
Brew day tip: It pairs especially well with Citra, Mosaic, or Galaxy when you want to push big, layered tropical fruit. It can also stand on its own in bolder hazy IPAs.
