A traditional Norwegian Kveik strain. Voss is one of the most popular kveik yeasts available because it’s fast, reliable, and can ferment at very high temperatures without throwing off-flavors. It has a unique character that sits somewhere between earthy, citrusy, and lightly spicy.

Kveik strains like Voss have been used in Norwegian farmhouse brewing for hundreds of years. Not the first rediscovery and hopefully not the last - Kveik became popular in mainstream brewing in the mid-2010s for its hot, fast fermentations and unique flavor.

Best For

Norwegian farmhouse ales, quick turnaround beers, and any style where you want interesting character and don’t mind (or actually want) a faster fermentation. Also works well for hoppy beers when you want something different from clean American or English - specifically more orange or citrus character.

Flavor & Behavior

Voss produces a distinctive mix of orange peel, earthy, and lightly spicy notes. The character can shift depending on fermentation temperature — warmer ferments tend to bring out more of the orange/citrus side, while cooler ferments can lean earthier.

One of its biggest advantages is how well it handles high fermentation temperatures without producing harsh or solvent-like flavors, which is very different from most modern ale yeasts.

In Practice

Voss is a great entry point into kveik because it’s fast, very temperature tolerant, and gives beers a unique character without needing to go full wild fermentation. Many brewers use it for quick farmhouse-style beers or when they want something different from clean American or English profiles.

Pitching & Rehydration

One 11g sachet does a standard 5 gallon batch around 1.050 OG. Rehydrate in 86–95°F water for 15–30 minutes before pitching. Voss is quite forgiving, but proper rehydration still helps it perform at its best.
