A modern, non-diastatic hybrid saison strain from Lallemand. Farmhouse was developed as a more reliable and faster-fermenting alternative to traditional saison yeasts. It delivers classic saison character (spicy, fruity, peppery) while being easier to work with and less likely to over-attenuate.

Saisons, farmhouse ales, and Belgian-style beers where you want that signature saison character without the risk of the beer drying out too much or stalling.

Flavor & Behavior

Farmhouse produces the classic spicy and fruity esters associated with saisons — think pepper, clove, citrus, and light fruit. Because it’s non-diastatic, it tends to be more predictable and controlled than some traditional saison strains, which can sometimes ferment too far.

It’s also relatively fast for a saison-style yeast, which makes it popular for quicker turnaround farmhouse beers.

In Practice

This is a great “safer” saison option if you like the style but have had issues with traditional strains (like Belle Saison) going too dry or being finicky. It still gives you that spicy, rustic saison character, but with better control and consistency. Many brewers use it for saisons and farmhouse ales when they want the flavor profile without the drama.

Pitching & Rehydration

One 11g sachet does a standard 5 gallon batch around 1.050 OG. Rehydrate in 86–95°F water for 15–30 minutes before pitching.
