Caution. This is the dairy-full zone. A non-fermentable sugar used to add sweetness and body to beer without increasing alcohol content. Commonly used in Milk Stouts, Sweet Stouts, and Porters to create a creamy, residual sweetness that balances roast and hop bitterness.
Because it doesn’t ferment, it stays in the finished beer, making it a popular choice for styles that benefit from a touch of sweetness and mouthfeel. Can also be used in experimental or pastry-style beers.
Add to the boil or directly to the fermenter toward the end of fermentation. 1 lb in 1 gallon of water yields a specific gravity of approximately 1.045.
