Fermentis SafAle T-58 Belgian Specialty Ale Yeast
T-58 is a bit of an unusual strain. While it’s officially a Belgian specialty yeast, it doesn’t behave like most classic Belgian strains. Instead of the bright fruity esters you often get from saison or strong Belgian yeasts, T-58 leans much more into spicy, peppery, and phenolic character. This can sometimes give it a profile that feels like a cross between Belgian and English styles.
Best For
Belgian-style ales where you want prominent spicy and phenolic notes, and some hybrid or specialty beers where that peppery character can work well.

Flavor & Behavior
T-58 produces noticeable spicy, peppery, and phenolic notes (think black pepper and clove) along with some underlying fruit. It’s much less fruity than strains like BE-256 or traditional saison yeasts, and the phenolic character can come across as earthy or slightly harsh if fermentation isn’t well managed.
It also tends to have moderate flocculation, so it doesn’t always drop as bright or as quickly as some other strains.
In Practice
This yeast is best used when you specifically want that spicy, phenolic edge rather than classic Belgian fruitiness. It can work in certain Belgian styles, but many brewers find it more useful in hybrid or specialty beers where the peppery character adds something interesting. It’s not the most versatile or forgiving strain, so it’s usually chosen with a specific flavor goal in mind rather than as a general-purpose Belgian yeast.
Pitching & Rehydration
One 11g sachet does a standard 5 gallon batch around 1.050 OG. Rehydrate in 86–95°F water for 15–30 minutes before pitching. Temperature control helps keep the phenolic character balanced instead of harsh.
