Storage note:
DME is hygroscopic. It's ok, go ahead and Google that word. Leave the bag open, particularly with decent humidity, and DME quickly becomes BME (brick malt extract) - the powder hardens. Keep it sealed tight in a cool, dry spot. Once you open a bag, portion what you need into smaller containers or vacuum-seal the rest. Old or poorly stored DME is where you get the stale, "homebrew" flavors. Please keep any leftover DME dry and cool.
