400.0°LProximity ReGenMalt Chocolate Wheat darkens beer and adds body without the husk bite of an equal hit of chocolate barley. Proximity lists it at about 400°L (guide range 375–425) for dunkelweizen, porter, stout, and dark lagers or ales. Their flavor note is dark cocoa with roasted-coffee underneath, and more body than chocolate barley.
Why we love it:
- "Dark malt WITH body? What will they think of next??"
- Cocoa and coffee from a San Luis Valley roast, smoother than chocolate barley at the same job
Flavor/Aroma
- Dark cocoa, roasted coffee underneath
Beer Interplay
- Color and roast in a small cut. Body and a fuller dark-beer mouthfeel if you use more of it
- More body than chocolate barley
- More body than CARAFA Special line - similar role in not imparting harsh bitterness
Practical Usage
Dunkelweizen, porter, stout, schwarzbier, dark mild, or any dark ale that should read cocoa instead of burnt grain. A little, around 2–5%, is color and a cocoa note. Toward 8–10% the roast shows up in the flavor. It has no diastatic power, so keep it a specialty against a base that can convert. Single infusion is fine. If the beer is supposed to taste like roasted barley, use chocolate barley. This is the wheat version.
