Carafa Special Type 2

Weyermann CARAFA SPECIAL Type 2 is the 2nd darkest of 3 partially the de-husked (debittered) Carafa Special series malts. Leads with a more delicate roast than a traditional black malt or roasted barley. The debittering process helps exemplify coffee and dark chocolate notes. Quickly imparts dark color with low usage.

The CARAFA SPECIAL line partially removes the barley husk before roasting. This enables more of the chocolate and coffee to come through while reducing (not eliminating) roast character. This reduces bitterness and astringency found in dark roasted malts, keeping the beer remarkably clean and drinkable with higher usage rates.

This is the malt you reach for when you want a Schwarzbier, Dunkel, or dark lager to look the part and taste roasty without turning bitter or burnt. It also plays nicely in stouts and porters when you want a smoother, more refined chocolate character instead of aggressive roast.
