When it comes to Oktoberfest, Americans technically like to celebrate old school. The beloved amber-lager brewed in spirit of Märzen (March beer) comes out in hoards in the US in late summer and early fall. Long the official Oktoberfestbier in Munich, it was replaced by a golden lager in 1990 defined as Festbier, similar to a helles lager, but stronger to make a good festival. We'll sort these definitions out below.
This post and recipe is focused on Märzen or Oktoberfest - as broadly understood in America - the malty amber lager.

A clean, amber lager with rich malt profile, characterized as bready and toasty. Decidedly malty, but not sweet and even slightly dry finish that helps make it easy to drink. Some spicy or herbal hop presence is optional, but should be very restrained, otherwise hops for bittering only. Aftertaste is the same malty flavor. Smooth with medium to medium-full body. These beers are not sweet, caramelly, overly dry, or roasty.
Märzen Ingredient Selection and History
German Vienna, Munich, and Pilsner malts are historically used, and their characteristics themselves define the style. Swapping similar profiles or kilning levels with American or English pale or base malts, say in place of Vienna or Pilsner, would create interesting takes on this beer - and likely not in a bad way. American craft brewers are certainly not using all-German ingredients.
Why are we splitting the base with Vienna, Munich, and Pilsner? These are the malts Germans had access to before specialty malts became common. But when you build a recipe using only Vienna, Munich, and Pilsner malts - even dark Munich - you wind up with a projected SRM right on the lighter side for this style, maybe 7.
Decocting a split base of Vienna/Munich/Pilsner 2 or 3 times will land such a beer right down the middle of the SRM range for this style, and check all the other boxes as well. This is why specialty malts do indeed provide a shortcut to brewing this beer. People say decocting offers a indescribable malt complexity compared to using just specialty malts - which is why that "shortcut" should be used thoughtfully if you're trying to accurately brew Märzen.
This helps to understand why there is no caramel sweetness or roastiness in Märzen. Those are modern creations that came with specialty malts, seeking partially to fill the color gap and replicate the style without using the traditional ingredients. Experimentation is always encouraged. But the message is to close the gap between historic and modern process and ingredients to better understand the priceless mystique of a beer stye.
It is in fact 2026 and this recipe does not call for a decoction unless you want. So, for proper Oktoberfest, we want elegant, robust, maltiness that is not sweet or roasty and highly drinkable. Bittering hops only for this rendition, using a typical German lager yeast. This rendition will try to deliver complex, layered malt character and land SRM and IBU values in the middle of their style ranges.
Double Dank Oktoberfest Recipe Logic
Fermentables
This recipe uses 1/3 Vienna, 1/3 Munich, 20% pilsner, and 12% specialty. Vienna is a touch higher kilned base at 3.3°L that can drive a touch of honey and some toast. The Munich portion is split in half between Munich Type 1 and 2 malts, largely to increase malt perception and color. Pilsner is used as a highly fermentable, almost thinning role that will help ensure a lower 1.010 FG is achievable - though it's a low concern for even dark Munich to ferment dry.
Melanoidin at 6% delivers concentrated malt character in biscuit and rich toast/melanoidin character, plus color depth. 4% Caramunich Type 3 is intended to bring mostly color, but helps check the "elegant" malt description. It is a hybrid-like caramel malt close to around 60°L that delivers layered malt depth, and at this usage rate, little residual sugar. The 2% of honey malt (like a lighter colored Melanoidin) is just a nice application of a malt like this - just a seasoning in line with the style's profile that furthers malt complexity, with low risk of contributing too much residual sugar. It helps dial up the lower-mid range of malt character and make the beer at least 2% American.
Decoction

Hops
Magnum bitters to 21 IBU - the middle range of the style. Any German noble hop is suitable. For practical recipe-selling purposes like getting IBU correct, this recipe sticks with Magnum instead of offering Hallertau or Saaz - plus this helps with yield and fermenting a cleaner beer.
Since you'd need more low-AA noble hops, it would make sense to bitter with them first, then do a smaller flavoring addition with the remainder, but not aromatic to brew to style. First wort hopping is also traditional and more relevant when using noble hops.
Yeast
The classic German lager yeasts are used. SafLager W-34/70 Bohemian Lager and Omega German Bock yeasts are good choices. Both ferment well and clean with appropriate temperature and lagering.
Primary Fermentation
Primary optimum temperature is in the low 50s for most lager strains relevant to this style, usually done within 10-14 days. Raise the temperature to 60°F for a few days before crashing for a diacetyl rest and boost yeast cleanup activities.
Aging and Lagering
Lagering is mostly about cold temperature and hard time. 32°F seems to be a good temperature for it, but for practical purposes 37°F works as well if it's sitting next to your kegs. Yeast activity is very restricted as soon as the beer temperature is crashed, but there is residual and limited diacetyl (VDK-vicinal diketone) cleanup - the butterscotch off-flavor. Cold temperature and hard time "soften edges," allow sulfur to dissipate, clarifies, and integrates flavor. Aging does not require yeast or a specific type of vessel beyond those functions.
Typical homebrewing procedure calls for a 4ish week lagering phase, or 3-6+ weeks. So how many weeks are we actually talking about? An estimate like this is derived from scattered yeast performance across strains, handling, and pitching rates that all influence how much time a lager needs to get to its expected taste. A concerning part about typical lagering instruction is making an effort to transfer residual yeast into a secondary vessel. That yeast bed is fine to be in contact with beer for a couple weeks, at which point the yeast's job is done anyways. Extended aging 4+ weeks on increasingly dead yeast will start inflicting off-flavors.
What prescriptive times don't do is listen to the beer - but the beer gets a vote! Here is a balanced timeline that accomplishes the goals of lagering, but you and the beer determine how long to age.
- Primary fermentation happens. Bumping temperature to 60°F for a diacetyl rest after final gravity helps ensure the yeast has less work to do after crashing. At this point we are about 14 days in from brewing, and are at or near final gravity.
- Final gravity is achieved. Crash the beer to 32°F or refrigerator temperature. Hold for about 7 days. Most yeast will flocculate, and we gave it time to sit on healthy, live yeast that is cleaning up flavors.
- We're now about 21 days in. Tasting the beer, it should be very clean and getting quite clear at this point. If there is an off-flavor concern (yeast job) - not roundness, sharpness, smoothness concern (cold aging's job), leave the beer for a few more days or a week. If it tastes clean, the yeasts' job is now done and the beer can be packaged. If you want it brighter before kegging, add a clarifying agent and give the required time.
- Transfer clear beer to final keg and carbonate. Compare this to depressurized lagering for weeks. Carbonating does not allow the beer to go fully flat (degas), and as it does, carry off volatile aromatics, nor sit on dead yeast.
- Beer ages in the keg, softening its character, accessible to flavor samples.
This approach listens to the beer, eliminates a transfer into secondary, and accomplishes the goals of yeast-function in lagering - and protects the beer from undesirable aging on dead yeast. It removes the guesswork of knowing how long you need to age for - you and the beer determine that.
Double Dank Oktoberfest Recipe

Fermentables
- 4 lb Weyermann Vienna
- 2 lb Weyermann Munich Type 1
- 2 lb Weyermann Munich Type 2
- 2.5 lb Weyermann Pilsner
- 12 oz Weyermann Melanoidin
- 8 oz Weyermann Caramunich Type 3
- 4 oz Root Shoot Honey
Hops
- .4 oz Magnum, first wort hop, 60 minutes
Yeast
Process
- Perform an infusion mash at 152°F for 40 minutes. Decoction optional.
- Mash out to 170°F (optional). Add the Magnum hops for first wort hopping. Collect about 6 gallons of wort - or the target volume to end the boil with 5.5 gallons in the kettle.
- Boil for 60 minutes.
- Cool to fermentation temperature. If using a chiller supplied with tap water, chill to a reasonable level, then cool the wort the remainder of the way to the low 50s in a cooler. Then pitch yeast.
- Ferment 10-14 days at fermentation temperature - usually low 50s.
- At around 10 days, increase the temperature to 60°F for a few days. Take a gravity.

At around 14 days, take another gravity to confirm terminal gravity was reached. Remove liquid from airlock. Cold crash to 32°F or refrigerator temperature. Fill airlock with vodka when temperatures stabilize. Vodka or neutral spirit in the airlock is a safe option during these steps to prevent freezing and reduce contamination risks from suckback.
- Hold the beer in the low-mid 30s for about 7 days.
- Sample the beer. It should be quite clear and getting pretty clean tasting at this point. If off-flavor concern due to yeast performance, leave beer for up to another week. If it passes and you want it brighter, add a clarifying agent and give its time to work.
- Transfer beer to CO2 purged keg.
- Carbonate to 2.6 volumes of beer. Allow the beer to tell you when its ready.
