Storytime
Mosaic was released in 2012 as the daughter of simcoe and nugget hops. Easily a top-10 hop in American craft brewing, it is regularly featured in hop-forward beers. It’s known for its layered, complex character - often bringing mango, passionfruit, peach, and blueberry-like notes all in one hop. Brewers love it for the depth and fruit-forward complexity it adds without needing a huge supporting cast of other hops.

Practical Use
Mosaic is primarily used for aroma and flavor. It performs best in late boil, whirlpool, and dry hopping, where it delivers bright tropical and stone fruit character. It works especially well in hazy/juicy IPAs but can also add nice depth to more balanced West Coast styles.
Dry hop 3–6 oz total in 5 gallons is common in very hop-forward beers. Some people push even higher, but the intense fruit character can start to feel heavy or muddled if overdone.
Best for: Late boil, whirlpool, and dry hopping. Brew day tip: Add late or as a dry hop to preserve the bright tropical and stone fruit notes. It pairs especially well with Citra, Simcoe, and Amarillo.
