Storytime
Idaho 7 comes from Jackson Hop Farm in Wilder, Idaho. Nate and Heather Jackson, first-generation hop growers, were submitting experimental varieties to Sierra Nevada for evaluation in 2015. One of the samples stood out for its bright tropical character - mango, pineapple, tangerine, and red berry notes - and ended up being the seventh one they really liked. That’s how it got the name Idaho 7 (it was originally nicknamed “007: The Golden Hop" - a far better name).

Practical Use
Idaho 7 works well for both bittering and aroma, but it really shines in late boil, whirlpool, and dry hopping. It delivers bright tropical and stone fruit character and tends to play nicely with other hops without completely dominating them.
On the dry hop side, 2–4 oz total in 5 gallons is a common range for solid impact. You can push a little higher if you want more intensity, but like most fruit-forward hops, it stays cleaner and more vibrant when you don’t go overboard.
Best for: Late boil, whirlpool, and dry hopping. Brew day tip: It pairs especially well with Citra, Mosaic, or El Dorado if you want to build layered tropical and stone fruit character.
