20.0°LDingemans Aromatic Malt is a Belgian kilned malt that delivers a big boost of rich malt aroma and flavor with a deep reddish color. It’s made with intensive germination (longer sprouting to build more flavor precursors) followed by mild kilning that drives strong Maillard reactions. This puts it in the same general category as Melanoidin-style malts — rich aroma and malt depth without the stewing process of a crystal malt.
Sensory Notes
- Very strong, rich malt character with clear biscuit, honey, and light toasted notes
- Deep amber to reddish color contribution
- Clean, substantial malt sweetness that feels aromatic rather than candy-like
Beer Interplay
- Adds noticeable malt depth, body, and aromatic complexity that makes the beer feel more layered and complete
- Improves flavor stability so the beer holds its character longer
- Supports the overall malt profile without clashing with hops or yeast
- Low in enzymes due to malting process
When to use
Use 5-15%+ in Belgian Dubbel, Tripel, Quad, Saison, Trappist-style ales, Amber Ales, or bocks when you want rich malt aroma and a touch of color. It builds that classic Belgian malt backbone without adding crystal sweetness or roast.
Compared to similarly malted products:
- Weyermann Melanoidin: Both are kilned for Maillard-driven aroma and depth. Melanoidin leans toastier and bready with a more honeyed, European malt character. Dingemans Aromatic is bolder on the nose with a deeper reddish color and slightly more aromatic punch.
- Root Shoot Honey Malt: Honey Malt emphasizes a clearer honey-like sweetness and softer malt character. Dingemans Aromatic brings stronger overall malt aroma and more color while still offering honeyed and biscuity notes. Use Honey Malt when you want that distinct honey sweetness to lead; use Aromatic when you want bigger malt aroma and depth with a reddish hue.
