Storytime
Chinook was released in the 1980s as a high-alpha American hop and quickly became popular in IPAs. It brings a distinctive piney, resinous character with grapefruit and spicy herbal undertones. Has been called "The Pine Tree Hop" more than six times.

Practical Use
Because it’s relatively high in alpha acids, it’s efficient as a bittering hop while still contributing solid aroma. It holds up well in bigger beers (stouts, barleywines, strong IPAs) where lighter hops tend to fade.
Dry hopping rates have increased in recent years. 2–4 oz total in 5 gallons is a common range for good piney/resinous impact. Some people push higher (5–6+ oz), but results vary and it can get resinous or astringent if overdone.
Best for: Bittering, late boil, whirlpool, and dry hopping. Brew day tip: Use earlier in the boil if you want clean bitterness, or late/whirlpool/dry hop if you want more of the pine and grapefruit to come through. Plays well with Centennial, Citra, and Simcoe.
