Root Shoot Cara Ruby is a crystal malt from the northern Colorado Front Range that gives a distinct ruby color and some body from unfermentables. Light caramel, earthy, with a roasty-strawberry cereal note. Not a dark fruit crystal. Not a roast.

Malt Cup 2025, 2nd in caramel!

Flavor/Aroma

  • Light caramel, floral
  • Earthy, walnut-like
  • Roasty strawberry cereal

Beer Interplay

  • Imparts ruby to amber color
  • Body from the unfermentable fraction
  • Stays lighter in the flavor than Proximity Crystal 45 and up. The strawberry and walnut are the tell, not burnt sugar

Practical Usage

"I need the glass to go red. I do not need prune." Root Shoot points it at up to 20% of the grist. A small cut, around 5–8%, is color and a light caramel note in a pale ale or IPA. Toward 10–15% it carries an amber, red, Scottish, or brown.
