Storytime

Azacca was released in 2013 and named after the Haitian god of agriculture. It brings a bright, juicy tropical character - often leaning into mango, pineapple, and orange - with a clean and expressive quality that works well in modern IPAs. While it hasn’t reached the same level of hype as Citra or Mosaic, it’s become a reliable hop for brewers who want bold tropical aroma without much pine or resin.

Practical Use

Azacca can be used for bittering, but it really shines in aroma. It performs well in late boil, whirlpool, and dry hopping, where it delivers that bright mango and pineapple character. It’s not quite as loud or complex as some of the bigger tropical hops - often described as having a softer profile, it pairs well but can get overpowered easily.

On the dry hop side, most people use somewhere between 2–4 oz total in 5 gallons for good impact. You can push a bit higher if you want more intensity, but it tends to stay cleaner and brighter when you don’t go too heavy.

Best for: Late boil, whirlpool, and dry hopping. Brew day tip: It works especially well alongside Citra, Mosaic, or El Dorado if you want to build layered tropical fruit character.
